In version XnConvert 1.91, every conversion brought up the Open Folder dialog. I could save the files where I liked.
In version 1.95, the conversions attempt to go to the file folder specified in output settings but conversion results in "output error" messages. Going to Output settings and opening and confirming the folder (with no changes), the conversion works correctly. This time. When I close the app and restart it, the same "output error" messages occur.
XnConvert has all the disk permissions in MacOS Monterey 12.1.

I downloaded the version from the xnconvert website which works as expected. So problem solved for me.
The version on the Apple app store seems to be the problem, despite having the same version number but a different build. Still, that's a continuing problem for anyone who purchased from Apple.
